Ingredients

  • 2 pounds chicken wings
  • 2 teaspoons kosher salt
  • 3/4 cup corn starch
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 cup cold water
  • 1/2 cup vodka
  • 2 quarts peanut oil
  • 1 recipe sweet soy sauce or sweet and spicy chili sauce

Instructions

  1. In a large bowl, whisk together kosher salt, corn starch, and baking powder.
  2. Add chicken wings and toss to coat. Transfer to a wire rack and refrigerate for at least 30 minutes.
  3. Heat peanut oil in a large wok or deep fryer to 350°F (177°C).
  4. In another bowl, combine corn starch, baking powder, and all-purpose flour. Whisk, then add cold water and vodka to form a smooth batter.
  5. Dip half of the wings into the batter and lower into hot oil. Repeat with remaining wings.
  6. Fry wings for about 8 minutes until golden brown. Transfer to a paper towel-lined plate and season with salt.
  7. Serve plain or toss with sweet soy sauce or sweet and spicy chili sauce.
