Description
Korean Fried Chicken features crispy wings coated in sweet, spicy goodness.
Ingredients

- 2 pounds chicken wings
- 2 teaspoons kosher salt
- 3/4 cup corn starch
- 1/2 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 cup cold water
- 1/2 cup vodka
- 2 quarts peanut oil
- 1 recipe sweet soy sauce or sweet and spicy chili sauce
Instructions
- In a large bowl, whisk together kosher salt, corn starch, and baking powder.
- Add chicken wings and toss to coat. Transfer to a wire rack and refrigerate for at least 30 minutes.
- Heat peanut oil in a large wok or deep fryer to 350°F (177°C).
- In another bowl, combine corn starch, baking powder, and all-purpose flour. Whisk, then add cold water and vodka to form a smooth batter.
- Dip half of the wings into the batter and lower into hot oil. Repeat with remaining wings.
- Fry wings for about 8 minutes until golden brown. Transfer to a paper towel-lined plate and season with salt.
- Serve plain or toss with sweet soy sauce or sweet and spicy chili sauce.

- Optional: Drizzle with sesame oil and garnish with sliced green onions for added flavor.
