- 2.5 pounds kohlrabi
- 3 tablespoons avocado oil
- 1 teaspoon garlic powder
- 1 teaspoon ancho chili powder
- 1 teaspoon freshly ground black pepper
- ¾ teaspoon salt
- sliced green onion or chives (garnish, optional)
Instructions
- Preheat your oven to 425°F.
- Prepare the kohlrabi by removing any stems and leaves. Cut off the tough end and peel the outer skin.
- Cut each kohlrabi in half, then remove the core if needed. Slice into ½-inch thick pieces and then cut those into fries.
- Dry the fries by placing them in a clean tea towel and patting them to remove excess moisture.
- Toss the fries in a bowl with avocado oil, garlic powder, ancho chili powder, black pepper, and salt until evenly coated.
- Grease a large sheet pan with ½ tablespoon of avocado oil.
- Arrange the kohlrabi fries in a single layer on the prepared sheet pan.
- Bake for 15 minutes. Flip the fries with a spatula.
- Return the sheet pan to the oven and bake for another 15 minutes until golden brown.
- Serve the fries in a serving dish, garnishing with sliced green onion or chives if desired.
