Ingredients

  • 2.5 pounds kohlrabi
  • 3 tablespoons avocado oil
  • 1 teaspoon garlic powder
  • 1 teaspoon ancho chili powder
  • 1 teaspoon freshly ground black pepper
  • ¾ teaspoon salt
  • sliced green onion or chives (garnish, optional)

Instructions

  1. Preheat your oven to 425°F.
  2. Prepare the kohlrabi by removing any stems and leaves. Cut off the tough end and peel the outer skin.
  3. Cut each kohlrabi in half, then remove the core if needed. Slice into ½-inch thick pieces and then cut those into fries.
  4. Dry the fries by placing them in a clean tea towel and patting them to remove excess moisture.
  5. Toss the fries in a bowl with avocado oil, garlic powder, ancho chili powder, black pepper, and salt until evenly coated.
  6. Grease a large sheet pan with ½ tablespoon of avocado oil.
  7. Arrange the kohlrabi fries in a single layer on the prepared sheet pan.
  8. Bake for 15 minutes. Flip the fries with a spatula.
  9. Return the sheet pan to the oven and bake for another 15 minutes until golden brown.
  10. Serve the fries in a serving dish, garnishing with sliced green onion or chives if desired.
