- 2 teaspoons Instant Yeast

Instructions
- Soak the Oats: In a large bowl, mix the rolled oats, salt, maple syrup, and 1 cup of boiling water. Let this mixture sit for about 10 minutes to soften the oats beautifully.
- Combine Ingredients: Add 3/4 cup of cold water to the soaked oats, sprinkle the instant yeast on top, and gently stir everything together until well combined.
- Incorporate Flour: Gradually add both whole wheat and bread flour to the mixture. Mix until a sticky dough forms, adjusting with more flour if needed until it holds together nicely.
- First Rise: Cover your bowl with a clean kitchen towel or plastic wrap, and place it in a warm, draft-free spot. Let it rise for 2 to 3 hours, or until it has doubled in size.
- Shape the Dough: Grease a loaf pan with a little oil. Turn the dough out onto a floured surface, shaping it into a loaf. Place it into the prepared pan, and let it rise again for 45 minutes to 1 hour, until it looks puffy and ready.
- Bake the Bread: Preheat your oven to 375ºF (190ºC). Bake the bread for about 45 minutes, until the top is golden brown, and when you tap the crust, it sounds hollow.
- Cool Down: After baking, allow the bread to cool in the pan for at least 30 minutes before slicing into it. This helps to preserve its soft texture!
