Instructions

  1. Soak the Oats: In a large bowl, mix the rolled oats, salt, maple syrup, and 1 cup of boiling water. Let this mixture sit for about 10 minutes to soften the oats beautifully.
  2. Combine Ingredients: Add 3/4 cup of cold water to the soaked oats, sprinkle the instant yeast on top, and gently stir everything together until well combined.
  3. Incorporate Flour: Gradually add both whole wheat and bread flour to the mixture. Mix until a sticky dough forms, adjusting with more flour if needed until it holds together nicely.
  4. First Rise: Cover your bowl with a clean kitchen towel or plastic wrap, and place it in a warm, draft-free spot. Let it rise for 2 to 3 hours, or until it has doubled in size.
  5. Shape the Dough: Grease a loaf pan with a little oil. Turn the dough out onto a floured surface, shaping it into a loaf. Place it into the prepared pan, and let it rise again for 45 minutes to 1 hour, until it looks puffy and ready.
  6. Bake the Bread: Preheat your oven to 375ºF (190ºC). Bake the bread for about 45 minutes, until the top is golden brown, and when you tap the crust, it sounds hollow.
  7. Cool Down: After baking, allow the bread to cool in the pan for at least 30 minutes before slicing into it. This helps to preserve its soft texture!
