Ingredients

  • 1 pound ground pork
  • 1 cup kimchi (chopped)
  • 1 medium yellow onion (shredded)
  • 3 cloves garlic (minced)
  • 1 tablespoon fresh ginger (grated)
  • 2 tablespoons soy sauce
  • 1 tablespoon rice wine (optional)
  • 1 large egg
  • 1 tablespoon sesame oil
  • 1 teaspoon salt
  • 1/2 teaspoon ground black or white pepper
  • 1 package dumpling wrappers (store-bought or homemade)
  • 1 tablespoon vegetable oil
  • 1/2 cup cold water
  • 1 tablespoon black sesame seeds
  • 2 tablespoons green onions (chopped)

Instructions

  1. In a large mixing bowl, combine the ground pork, kimchi, shredded onion, garlic, ginger, soy sauce, rice wine, egg, sesame oil, salt, and pepper. Stir until the mixture is thoroughly blended.
  2. Cover the bowl with plastic wrap and allow the mixture to marinate for at least 20 minutes, or overnight in the refrigerator for deeper flavor.
  3. Fill a small bowl with water for dipping. Take one dumpling wrapper and dip your finger in the water, smudging it along the edge to help seal the dumpling.
  4. Place a tablespoon of the filling in the center of the wrapper. Fold it over into a half-moon shape and press the edges together tightly, or pleat for a decorative touch. Set the filled dumpling on a parchment-lined tray.
  5. Continue filling and sealing the remaining dumpling wrappers, placing each on the tray, and cover them with a tea towel to prevent drying.
  6. In a large non-stick frying pan, heat 1 tablespoon of vegetable oil over medium-high heat. Add the dumplings and fry for about 3 minutes until the bottoms turn golden brown.
  7. Carefully add ½ cup of cold water into the pan, cover with a lid, and let them steam for 7-8 minutes, until nearly all the water has evaporated.
  8. Remove the lid and reduce the heat to medium. Allow them to cook for another 2 minutes until the remaining water is absorbed and the bottoms are crispy. Repeat with any remaining dumplings.
  9. If you prefer to boil, cook the dumplings in batches in a large pot of boiling water until they float, about 5-7 minutes. Drain well before serving.
  10. Arrange the dumplings on a plate and garnish with black sesame seeds and chopped green onions. Serve with vinegar or soy sauce for dipping.
