Keto Pumpkin Turkey Meatballs with Spicy Tomato Sauce


Ingredients

  • 1 pound ground turkey
  • 1/2 cup pumpkin puree
  • 1/4 cup almond flour
  • 1 large egg
  • 2 cloves garlic
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried sage
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon olive oil
  • 1/2 cup onion
  • 2 cloves garlic
  • 1 can diced tomatoes, no sugar added
  • 1 teaspoon red pepper flakes
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the ground turkey, pumpkin puree, almond flour, egg, garlic, salt, pepper, dried sage, onion powder, and nutmeg. Mix thoroughly until all ingredients are well incorporated.
  3. Shape the mixture into 1.5-inch (4cm) meatballs and place them on the prepared baking sheet.
  4. Bake the meatballs in the preheated oven for 20-25 minutes, or until they are cooked through and have a golden-brown exterior.
  5. While the meatballs are baking, heat olive oil in a saucepan over medium heat. Add the finely chopped onion and minced garlic, sautéing until the onion is translucent and fragrant.
  6. Stir in the diced tomatoes, red pepper flakes, dried oregano, salt, and pepper. Bring the sauce to a simmer and let it cook for about 10-15 minutes, allowing the flavors to meld and the sauce to thicken slightly.
  7. Once the meatballs are done, remove them from the oven and let them rest for a couple of minutes.
  8. Serve the meatballs hot, topped with the spicy tomato sauce.
