Instructions
- Begin by heating 1″ of frying oil in a heavy-bottomed pan or setting your deep fryer to 365°F. You’ll know it’s ready when the oil shimmers.
- Carefully separate the large onion into individual rings. Make sure they are uniform in size for even cooking, and set them aside.
- In a wide bowl, combine the whey protein isolate, xanthan gum, kosher salt, baking powder, and grated parmesan. Stir them together until evenly mixed.
- Pour in the soda water and add the whisked egg to the dry mix. Whisk everything together gently until a smooth batter forms.
- Once the oil is hot, use tongs to dip each onion ring into the batter, ensuring it’s fully coated. Let any excess batter drip off before transferring them to the hot oil.
- Carefully place the coated onion rings into the hot oil. Fry them until they turn golden brown and crispy, about 3-4 minutes.
