  • 4 large bell peppers
  • 1 pound ground beef
  • 1 cup shredded mozzarella cheese
  • 1/2 cup ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup chopped onion
  • 2 cloves garlic
  • 1 cup low-carb marinara sauce
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, add the olive oil and chopped onions. Sauté until the onions become translucent, about 3-4 minutes.
  3. Add the minced garlic and ground beef to the skillet. Cook until the beef is browned, breaking it apart with a spatula, about 5-7 minutes. Drain any excess fat.
  4. Stir in the low-carb marinara sauce, oregano, basil, salt, and pepper. Simmer for 2-3 minutes, then remove the skillet from heat.
  5. In a mixing bowl, combine the browned beef mixture, ricotta cheese, and half of the mozzarella and Parmesan cheeses. Mix until well incorporated.
  6. Fill each bell pepper with the meat and cheese mixture, pressing down gently to ensure they are fully stuffed.
  7. Place the stuffed peppers in a baking dish and bake in the preheated oven for 20 minutes.
  8. Top each pepper with the remaining mozzarella and Parmesan cheeses, then bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  9. Remove from the oven and let sit for 5 minutes before serving.
