Ingredients

  • 4 fillets salmon
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated parmesan cheese
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • 1 tbsp Italian seasoning
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Season the salmon fillets with salt and pepper on both sides.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the salmon fillets skin-side up and cook for 3-4 minutes until golden brown. Flip the fillets and cook for another 3-4 minutes. Remove the salmon from the skillet and set aside.
  3. In the same skillet, add minced garlic and sauté for about 1 minute until fragrant.
  4. Pour in the chicken broth to deglaze the pan, scraping up any browned bits from the bottom of the skillet.
  5. Stir in the heavy cream, parmesan cheese, sun-dried tomatoes, and Italian seasoning. Bring the mixture to a simmer and let cook for a few minutes until the sauce begins to thicken.
  6. Add the fresh spinach to the skillet and cook until the spinach wilts, about 2 minutes.
  7. Return the salmon fillets to the skillet and spoon the sauce over them. Cook for an additional 3-5 minutes, or until the salmon is cooked through and the sauce is creamy.
  8. Garnish with fresh basil if desired and serve hot.
