- 4 fillets cod
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup almond flour
- 2 tbsp olive oil
- 4 tbsp unsalted butter
- 1/4 cup fresh lemon juice
- 1/2 cup chicken broth
- 1/4 cup capers
- 2 tbsp fresh parsley
- Lemon slices
Instructions
- Season the cod fillets evenly with salt and pepper.
- Spread the almond flour on a plate and lightly dredge each cod fillet, shaking off excess flour.
- Heat olive oil over medium-high heat in a large skillet.
- Once hot, add the cod fillets and cook for 3-4 minutes on each side until golden brown and cooked through. Remove the cod from the skillet and set aside.
- In the same skillet, reduce the heat to medium and add butter, scraping up any browned bits from the bottom of the pan.
- Stir in the lemon juice and chicken broth, bringing the mixture to a simmer. Allow the sauce to reduce slightly, about 3 minutes.
- Add capers to the sauce and stir to combine.
- Return the cod fillets to the skillet, spooning the sauce over the fish. Cook for an additional 2 minutes to allow the flavors to meld.
- Garnish with chopped parsley and lemon slices before serving.
