  • 4 fillets cod
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup almond flour
  • 2 tbsp olive oil
  • 4 tbsp unsalted butter
  • 1/4 cup fresh lemon juice
  • 1/2 cup chicken broth
  • 1/4 cup capers
  • 2 tbsp fresh parsley
  • Lemon slices

Instructions

  1. Season the cod fillets evenly with salt and pepper.
  2. Spread the almond flour on a plate and lightly dredge each cod fillet, shaking off excess flour.
  3. Heat olive oil over medium-high heat in a large skillet.
  4. Once hot, add the cod fillets and cook for 3-4 minutes on each side until golden brown and cooked through. Remove the cod from the skillet and set aside.
  5. In the same skillet, reduce the heat to medium and add butter, scraping up any browned bits from the bottom of the pan.
  6. Stir in the lemon juice and chicken broth, bringing the mixture to a simmer. Allow the sauce to reduce slightly, about 3 minutes.
  7. Add capers to the sauce and stir to combine.
  8. Return the cod fillets to the skillet, spooning the sauce over the fish. Cook for an additional 2 minutes to allow the flavors to meld.
  9. Garnish with chopped parsley and lemon slices before serving.
