- 1 lb pork shoulder, thinly sliced
- 4 low carb tortillas
- 2 tbsp avocado oil
- 1 tbsp unsalted butter
- 1 medium bell pepper, thinly sliced
- 1/2 medium red onion, thinly sliced
- 2 cloves garlic, minced
- 1 tbsp ginger, grated
- 2 tbsp soy sauce or tamari
- 1 tbsp sesame oil
- 1 tbsp rice vinegar
- 1 tbsp erythritol
- 1 tsp crushed red pepper flakes
- Salt and pepper to taste
- Fresh cilantro, chopped for garnish
- 1 lime, cut into wedges for serving
Instructions
- Preheat a large skillet or wok over medium-high heat and add avocado oil.
- Season the sliced pork shoulder with salt and pepper, then sear in the skillet until browned and cooked through, approximately 6-8 minutes. Remove pork from skillet and set aside.
- In the same skillet, melt butter over medium heat and sauté bell pepper and red onion until they begin to soften, about 5 minutes.
- Add minced garlic and grated ginger to the skillet and cook until fragrant, about 1 minute.
- Return the cooked pork to the skillet with the vegetables. Pour in soy sauce, sesame oil, rice vinegar, and sprinkle with erythritol, stirring to combine.
- Sprinkle in the red pepper flakes if using and cook for another 2-3 minutes, allowing the flavors to meld.
- Warm the low carb tortillas in a dry pan over medium heat for about 30 seconds on each side.
- Assemble the tacos by dividing the pork mixture among the warmed tortillas.
- Garnish with fresh cilantro and serve with lime wedges on the side.
