  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • Salt and pepper to taste
  • Optional proteins: shrimp, chicken, or tofu (cooked and diced)

Instructions

  1. If possible, use day-old rice for the best texture. It helps prevent sogginess.
  2. In a large skillet or wok, heat the vegetable oil over medium-high heat.
  3. Sauté the diced carrots and bell pepper until softened, about 3-5 minutes.
  4. Stir in the peas and cook for another 1-2 minutes.
  5. Push the vegetables to the side of the pan. Crack the eggs into the skillet, sautéing them until fully cooked. Mix with the vegetables.
  6. Add the cooked rice to the skillet. Stir well, breaking apart any clumps.
  7. Pour the soy sauce and sesame oil over the rice. Stir thoroughly to ensure even distribution.
  8. Mix in the sliced green onions, cooking for an additional 1-2 minutes.
  9. Season with salt and pepper if desired. Feel free to add more soy sauce for additional flavor.
  10. Once everything is well-mixed and heated through, remove from heat and serve immediately.
