- 4 cups cooked rice (preferably day-old)
- 2 tablespoons vegetable oil
- 1 cup diced carrots
- 1 cup diced bell pepper
- 1/2 cup peas (fresh or frozen)
- 2 large eggs
- 2–3 green onions, sliced
- 3 tablespoons soy sauce
- 1 tablespoon sesame oil
- Salt and pepper to taste
- Optional proteins: shrimp, chicken, or tofu (cooked and diced)
Instructions
- If possible, use day-old rice for the best texture. It helps prevent sogginess.
- In a large skillet or wok, heat the vegetable oil over medium-high heat.
- Sauté the diced carrots and bell pepper until softened, about 3-5 minutes.
- Stir in the peas and cook for another 1-2 minutes.
- Push the vegetables to the side of the pan. Crack the eggs into the skillet, sautéing them until fully cooked. Mix with the vegetables.
- Add the cooked rice to the skillet. Stir well, breaking apart any clumps.
- Pour the soy sauce and sesame oil over the rice. Stir thoroughly to ensure even distribution.
- Mix in the sliced green onions, cooking for an additional 1-2 minutes.
- Season with salt and pepper if desired. Feel free to add more soy sauce for additional flavor.
- Once everything is well-mixed and heated through, remove from heat and serve immediately.
