  • 1 tbsp Dijon mustard
  • 2 cloves Minced garlic
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 1/2 tsp Red pepper flakes
  • 1 tbsp Olive oil
  • 1 tsp Chili powder

Instructions

  1. Prepare the glaze: Mix peach preserves, olive oil, soy sauce, apple cider vinegar, Dijon mustard, minced garlic, salt, black pepper, and red pepper flakes in a bowl.
  2. Season the chicken: Pat chicken thighs dry and coat with salt, black pepper, and chili powder.
  3. Cook the chicken: Heat skillet, add oil, and cook thighs for 5 minutes undisturbed.
  4. Flip the chicken and reduce heat to cook through without burning.
  5. Sauté jalapeños: Cook jalapeños until softened, then add diced peaches.
  6. Finish with glaze: Pour glaze over fruit and vegetables, nestle chicken back in pan, and spoon sauce over top.
  7. Let chicken rest for 5 minutes before serving.
