Description

This easy Italian sausage bow tie pasta is a flavorful family dinner ready in under 30 minutes. It features savory Italian sausage, colorful bell peppers, and bow tie pasta coated in a light tomato sauce, finished with Parmesan cheese.

  • 340g bow tie pasta
  • 450g Italian sausage
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 can (410g) diced tomatoes
  • 120ml chicken broth
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Grated Parmesan cheese, for serving

Instructions

  1. Cook the bow tie pasta according to package instructions until al dente. Drain and set aside, reserving about a cup of pasta water.
  2. Heat olive oil in a large skillet over medium-high heat. Add Italian sausage and cook until browned and cooked through, breaking it into crumbles as it cooks. Transfer sausage to a plate and set aside.
  3. In the same skillet, add diced onion and bell peppers. Cook until softened, about 5 minutes. Add garlic and cook for an additional minute until fragrant.
  4. Stir in diced tomatoes with their juices, chicken broth, dried basil, and dried oregano. Bring mixture to a simmer.
  5. Return the cooked sausage to the skillet. Simmer for 5-7 minutes, allowing flavors to meld. Season with salt and pepper to taste.
  6. Add the cooked bow tie pasta to the skillet and toss until well combined with the sauce and sausage. If the sauce is too thick, add a splash of the reserved pasta water.
  7. Serve hot, garnished with freshly grated Parmesan cheese.

  • For a spicier version, use hot Italian sausage or add red pepper flakes to taste.
