  • 4 cups corn kernels (fresh, frozen, or canned)
  • 1 tbsp butter or olive oil
  • ½ cup mayonnaise
  • ½ cup sour cream
  • 1 cup crumbled cotija cheese (plus more for garnish)
  • 1 jalapeño, finely chopped
  • 1 clove garlic, minced
  • 1 tsp chili powder
  • ½ tsp smoked paprika
  • Juice of 1 lime
  • Salt and pepper to taste
  • 2 tbsp chopped fresh cilantro

Instructions

  1. Heat a large skillet over medium-high heat. Add butter or olive oil and sauté corn for 6-8 minutes until lightly charred. Let cool.
  2. In a large bowl, combine mayonnaise, sour cream, lime juice, minced garlic, chili powder, smoked paprika, salt, and pepper. Stir until smooth.
  3. Gently fold the cooled corn, chopped jalapeño, and most of the cotija cheese into the creamy mixture. Stir until evenly coated. Taste and adjust seasoning.
  4. Top the dip with the remaining cotija cheese and fresh cilantro.
  5. Serve the street corn dip cold, chilled for at least 30 minutes, or warm by baking in a preheated oven at 375°F (190°C) for 15 minutes until bubbly.
