Ingredients

  • 130 g plain flour
  • 150 g white granulated sugar
  • 0.25 teaspoon salt
  • 100 g quick oats
  • 57 g fine desiccated coconut
  • 0.25 cup golden syrup
  • 115 g unsalted butter
  • 1 teaspoon baking soda
  • 1.5 tablespoons water
  • 200 g milk chocolate

Instructions

  1. Preheat your oven to 180°C (160°C fan forced) / 350°F. Line 2-3 large baking sheets with baking paper.
  2. In a large bowl, whisk together the plain flour, white sugar, quick oats, desiccated coconut, and salt until well combined. Set aside.
  3. In a small saucepan over low-medium heat, combine the unsalted butter, golden syrup, and water. Stir until the mixture is fully melted and warm.
  4. Remove the pan from heat and stir in the baking soda, which will make the mixture frothy.
  5. Gently fold the melted mixture into the dry ingredients using a spatula until fully combined.
  6. Allow the dough to sit at room temperature for 5-10 minutes.
  7. Roll the dough into small balls, about 2 teaspoons each, spacing them 2 inches apart on your baking sheet. Lightly press down on the tops.
  8. Bake for 12-14 minutes or until they turn a deep golden brown. Let sit on the tray for 5 minutes before transferring to a wire rack.
  9. If any cookies are misshapen, use a larger round cookie cutter to gently shape them while still warm.
  10. Melt the milk chocolate in a bowl over simmering water or microwave in 20-second bursts until just melted.
  11. Allow the melted chocolate to cool slightly until it thickens. Place ½ to 1 teaspoon of chocolate onto a cookie and sandwich it with another. Let set at room temperature.
