Irresistible Cauliflower Cheese That Will Steal Your Heart


Ingredients

  • 1 kg Cauliflower florets
  • 2 tbsp Extra virgin olive oil
  • 1/2 tsp Sea salt
  • 1/8 tsp Pepper
  • 60 g Unsalted butter
  • 3.5 tbsp Flour (plain / all-purpose)
  • 1 cup Milk
  • 1 cup Cream
  • 1/2 tsp Cooking salt
  • 1/4 tsp Nutmeg powder
  • 1 cup Red Leicester cheese (grated)
  • 1/2 cup Gruyère cheese (grated)
  • 1/2 cup Red Leicester cheese (grated)
  • 1/2 cup Gruyère cheese (grated)

Instructions

  1. Preheat your oven to 220°C / 430°F (200°C fan).
  2. Toss the cauliflower florets in olive oil, sea salt, and pepper. Spread them on a large tray.
  3. Roast for 20 minutes without turning.
  4. Lower the oven temperature to 180°C / 350°F.
  5. Heat the milk and cream in a saucepan until hot, but not boiling.
  6. Melt the butter in a large saucepan over medium heat. Add flour and cook for 3 minutes.
  7. Pour in half of the hot milk while stirring. Stir in the remaining milk.
  8. Keep stirring on heat for about 1 minute until the mixture thickens.
  9. Turn off the stove and stir in the cooking salt, nutmeg powder, and both cheeses until thick and creamy.
  10. Add the roasted cauliflower to the cheese sauce and gently toss.
  11. Transfer the mixture to a 2L / 2qt baking dish, spreading it out evenly.
  12. Top with remaining grated Red Leicester and Gruyère cheese.
  13. Bake at 180°C / 350°F for 30 minutes.
  14. Stand for 5 minutes after baking to let the flavors meld together.
