Irresistible Cauliflower Cheese That Will Steal Your Heart

- 1 kg Cauliflower florets
- 2 tbsp Extra virgin olive oil
- 1/2 tsp Sea salt
- 1/8 tsp Pepper
- 60 g Unsalted butter
- 3.5 tbsp Flour (plain / all-purpose)
- 1 cup Milk
- 1 cup Cream
- 1/2 tsp Cooking salt
- 1/4 tsp Nutmeg powder
- 1 cup Red Leicester cheese (grated)
- 1/2 cup Gruyère cheese (grated)
- 1/2 cup Red Leicester cheese (grated)
- 1/2 cup Gruyère cheese (grated)
Instructions
- Preheat your oven to 220°C / 430°F (200°C fan).
- Toss the cauliflower florets in olive oil, sea salt, and pepper. Spread them on a large tray.
- Roast for 20 minutes without turning.
- Lower the oven temperature to 180°C / 350°F.
- Heat the milk and cream in a saucepan until hot, but not boiling.
- Melt the butter in a large saucepan over medium heat. Add flour and cook for 3 minutes.
- Pour in half of the hot milk while stirring. Stir in the remaining milk.
- Keep stirring on heat for about 1 minute until the mixture thickens.
- Turn off the stove and stir in the cooking salt, nutmeg powder, and both cheeses until thick and creamy.
- Add the roasted cauliflower to the cheese sauce and gently toss.
- Transfer the mixture to a 2L / 2qt baking dish, spreading it out evenly.
- Top with remaining grated Red Leicester and Gruyère cheese.
- Bake at 180°C / 350°F for 30 minutes.
- Stand for 5 minutes after baking to let the flavors meld together.
