Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and cook until translucent. Stir in minced garlic and red bell pepper, cooking for a few more minutes.
- Pour in diced tomatoes with their juices and stir.
- Add vegetable broth, dried oregano, paprika, and red pepper flakes. Bring to a simmer.
- Season with salt and pepper to taste.
- Add white fish pieces and cook for about 5 minutes.
- Add shrimp and mussels. Cover and cook until mussels open and shrimp turn pink, about 5-7 minutes.
- Remove from heat and stir in fresh parsley.
- Ladle the stew into bowls and serve with lemon wedges.
