  • 4 pieces Boneless, skinless chicken breast cutlets
  • 2 large Eggs
  • 1 cup All-purpose flour
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • 1 cup Breadcrumbs (panko preferred)
  • 1/2 cup Grated Parmesan cheese
  • 1/2 cup Vegetable oil
  • 1/4 cup Hot honey
  • 1 tablespoon Fresh parsley (optional, for garnish)
  • 2 pieces Lemon wedges (for serving)

Instructions

  1. Pound the Chicken: If your cutlets aren’t uniformly thin, place them between two pieces of plastic wrap. Gently pound them with a meat mallet until they are even in thickness.
  2. Mix the Flour: In a shallow dish, combine the flour, salt, and black pepper. Mix well to create a well-seasoned coating.
  3. Whisk the Eggs: In another shallow dish, whisk together the eggs with a tablespoon of water until smooth.
  4. Prepare the Coating: In a third shallow dish, combine the breadcrumbs with the grated Parmesan cheese. Stir until evenly mixed.
  5. Dredge in Flour: Coat each chicken cutlet thoroughly in the flour mixture. Shake off any excess flour.
  6. Dip in Eggs: Carefully dip the floured cutlet into the beaten eggs.
  7. Press into Breadcrumbs: Press the cutlet into the breadcrumb mixture, coating both sides evenly.
  8. Heat the Oil: In a large skillet, heat the vegetable oil over medium-high heat until shimmering.
  9. Fry the Cutlets: Add the chicken cutlets to the skillet, cooking in batches if needed. Fry each side for 3-4 minutes.
  10. Drain Excess Oil: Remove the cutlets from the skillet and place them on a paper towel-lined plate to drain excess oil.
  11. Drizzle with Honey: Drizzle the warm cutlets with hot honey.
  12. Garnish and Serve: Garnish with fresh parsley and serve immediately with lemon wedges.
