- 1.5 lbs Boneless, skinless chicken thighs
- 1 tbsp Kosher salt (adjust to taste)
- 1 tsp Pepper (adjust to taste)
- 1 tbsp Smoked paprika
- 1 tsp Garlic powder
- 2 tbsp Apple cider vinegar
- 0.5 cup Hot honey or regular honey
- 0.5 cup BBQ sauce (your favorite variety)
- 1 small Green cabbage (thinly sliced)
- 2 medium Carrots (shaved)
- 0.25 cup Red onion (thinly sliced)
- 0.25 cup Chopped cilantro
- 0.25 cup Sliced almonds
- 1–2 pieces Oranges (fresh segments)
- 2 tbsp Freshly squeezed lime juice
- 1 tbsp Honey
- 1 clove Garlic (minced)
- 1 pinch Kosher salt (adjust to taste)
- 1 pinch Pepper (adjust to taste)
- 2 tbsp Avocado oil
Instructions
- Preheat the broiler in your oven to high, positioning an oven rack directly beneath it.
- Season the chicken thighs on a baking sheet, generously sprinkling with kosher salt, pepper, smoked paprika, and garlic powder.
- Broil the chicken for 6 minutes under the high broiler. Flip the thighs and broil for an additional 6 minutes.
- Whisk together the hot honey, BBQ sauce, and apple cider vinegar in a bowl while the chicken is broiling.
- Brush the chicken with the honey mixture, then return it to the broiler for 1 minute.
- Flip the chicken thighs again, applying the remaining honey mixture to the other side. Broil for another minute.
- Repeat the brushing and broiling process once or twice more until satisfied with the charred topping.
- Combine in a large bowl the shredded cabbage, shaved carrots, chopped cilantro, sliced red onion, almonds, and chopped oranges.
- Whisk together the lime juice, honey, minced garlic, salt, and pepper. Gradually whisk in the avocado oil.
- Pour the dressing over the slaw and toss well to coat every element.
- Slice the chicken thighs and place them atop the slaw, garnish with sesame seeds if desired.
