Ingredients

  • 1.5 lbs Boneless, skinless chicken thighs
  • 1 tbsp Kosher salt (adjust to taste)
  • 1 tsp Pepper (adjust to taste)
  • 1 tbsp Smoked paprika
  • 1 tsp Garlic powder
  • 2 tbsp Apple cider vinegar
  • 0.5 cup Hot honey or regular honey
  • 0.5 cup BBQ sauce (your favorite variety)
  • 1 small Green cabbage (thinly sliced)
  • 2 medium Carrots (shaved)
  • 0.25 cup Red onion (thinly sliced)
  • 0.25 cup Chopped cilantro
  • 0.25 cup Sliced almonds
  • 12 pieces Oranges (fresh segments)
  • 2 tbsp Freshly squeezed lime juice
  • 1 tbsp Honey
  • 1 clove Garlic (minced)
  • 1 pinch Kosher salt (adjust to taste)
  • 1 pinch Pepper (adjust to taste)
  • 2 tbsp Avocado oil

Instructions

  1. Preheat the broiler in your oven to high, positioning an oven rack directly beneath it.
  2. Season the chicken thighs on a baking sheet, generously sprinkling with kosher salt, pepper, smoked paprika, and garlic powder.
  3. Broil the chicken for 6 minutes under the high broiler. Flip the thighs and broil for an additional 6 minutes.
  4. Whisk together the hot honey, BBQ sauce, and apple cider vinegar in a bowl while the chicken is broiling.
  5. Brush the chicken with the honey mixture, then return it to the broiler for 1 minute.
  6. Flip the chicken thighs again, applying the remaining honey mixture to the other side. Broil for another minute.
  7. Repeat the brushing and broiling process once or twice more until satisfied with the charred topping.
  8. Combine in a large bowl the shredded cabbage, shaved carrots, chopped cilantro, sliced red onion, almonds, and chopped oranges.
  9. Whisk together the lime juice, honey, minced garlic, salt, and pepper. Gradually whisk in the avocado oil.
  10. Pour the dressing over the slaw and toss well to coat every element.
  11. Slice the chicken thighs and place them atop the slaw, garnish with sesame seeds if desired.
