Ingredients

  • 1 cup cottage cheese
  • 1 teaspoon fine sea salt
  • 1/2 cup sun-dried tomatoes (chopped)
  • 1 cup fresh baby spinach (chopped)
  • 1/4 cup fresh basil leaves (chopped)
  • 1/2 cup crumbled feta

Instructions

  1. Preheat your oven to 350°F.
  2. Mist a 12-cup muffin pan with cooking spray.
  3. Combine large eggs, cottage cheese, and fine sea salt in a blender; blend until smooth.
  4. Add sun-dried tomatoes, spinach, and basil to the blended mixture; stir until evenly combined.
  5. Pour the mixture into the prepared muffin cups and top with crumbled feta and black pepper.
  6. Bake for 20-22 minutes, until puffy and slightly firm in the center.
  7. Cool on a wire rack for at least 5 minutes before serving.
