- 1 cup cottage cheese
- 1 teaspoon fine sea salt
- 1/2 cup sun-dried tomatoes (chopped)
- 1 cup fresh baby spinach (chopped)
- 1/4 cup fresh basil leaves (chopped)

Instructions
- Preheat your oven to 350°F.
- Mist a 12-cup muffin pan with cooking spray.
- Combine large eggs, cottage cheese, and fine sea salt in a blender; blend until smooth.
- Add sun-dried tomatoes, spinach, and basil to the blended mixture; stir until evenly combined.
- Pour the mixture into the prepared muffin cups and top with crumbled feta and black pepper.
- Bake for 20-22 minutes, until puffy and slightly firm in the center.
- Cool on a wire rack for at least 5 minutes before serving.
