Description

Enjoy a restaurant-quality Hibachi Chicken dinner made easily on your Blackstone griddle. This recipe delivers juicy chicken, flavorful fried rice, and tender vegetables for a complete and satisfying meal.


Ingredients

  • 1 lb boneless, skinless chicken breasts (cut into bite-sized pieces)
  • 1/4 cup soy sauce
  • 2 tbsp teriyaki sauce
  • 1 tbsp sesame oil
  • 2 tbsp vegetable oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • 3 cups cooked day-old rice
  • 2 tbsp vegetable oil
  • 2 eggs, beaten
  • 1/2 cup frozen peas and carrots
  • 1/4 cup chopped green onions
  • 2 tbsp soy sauce
  • Salt and pepper to taste
  • 2 zucchinis, sliced into half-moons
  • 1 onion, sliced
  • 1 tbsp vegetable oil
  • Salt and pepper to taste

Instructions

  1. Marinate chicken with soy sauce, teriyaki sauce, sesame oil, garlic powder, onion powder, salt, and pepper. Let sit for 20 minutes.
  2. Scramble eggs in vegetable oil on a hot griddle or skillet, then push to one side.
  3. Add cooked rice, frozen peas & carrots, and green onions. Drizzle with soy sauce, stir well, and cook for 5-7 minutes, then remove.
  4. Sauté zucchini and onion with oil, salt, and pepper for 5-7 minutes until caramelized. Set aside.
  5. Cook the marinated chicken until browned and fully cooked, about 6–8 minutes.
  6. Plate the chicken with fried rice and vegetables. Serve hot!

Notes

  • Use day-old rice for the best fried rice texture.
  • Adjust soy sauce to your preference.
  • Feel free to add other vegetables like mushrooms or bell peppers.
