- 2 pounds lean ground beef

- 2 cans (15 oz each) kidney beans, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (28 oz) crushed tomatoes
- 2 tablespoons chili powder
- 1 tablespoon ground cumin
- 1 tablespoon smoked paprika
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1–2 jalapeños, diced (optional, adjust for spice level)
- 1 green bell pepper, diced
- 1 cup beef broth
- 1 tablespoon olive oil
- Fresh cilantro, for garnish (optional)
- Sour cream, for serving (optional)
- Shredded cheese, for serving (optional)
Instructions
- In a skillet over medium heat, add olive oil. Once hot, add the ground beef. Cook until browned, about 5-7 minutes. Drain excess fat.
- Add diced onion and minced garlic to the skillet. Sauté for another 3-4 minutes until the onions are translucent.
- Pour the browned beef and onion mixture into the crockpot.
- Add the kidney beans, black beans, crushed tomatoes, diced bell pepper, and jalapeños (if using) into the crockpot.
- Sprinkle chili powder, cumin, smoked paprika, salt, and black pepper over the top. Stir until well combined.
- Pour in the beef broth, making sure all ingredients are submerged.
- Cover the crockpot and set it to low for 6-8 hours or high for 3-4 hours. Stir occasionally if possible.
