  • 4 stalks scallions (chopped)
  • 2 tablespoons olive oil
  • salt (to taste)
  • black pepper (to taste)

Instructions

  1. Cook the sushi rice: Prepare according to package instructions, then stir in rice wine vinegar, sesame oil, and sugar while warm.
  2. Prepare the toppings: Mix canned tuna with bang bang sauce until well combined. Slice avocado and chop scallions.
  3. Pan-fry the rice: Heat olive oil in a skillet, add sushi rice, press down gently, and cook for 3-5 minutes until golden brown. Flip and cook for another minute before breaking it up.
  4. Assemble the bowl: Layer crispy sushi rice in a serving bowl, top with bang bang tuna, avocado, and scallions. Finish with furikake and a drizzle of Sriracha or spicy mayo.
