  • 1 tablespoon sesame oil
  • 1 teaspoon grated fresh ginger
  • 2 cloves garlic, finely chopped
  • 2 tablespoons packed brown sugar
  • 60 ml soy sauce
  • 120 ml pineapple juice
  • 240 ml teriyaki sauce
  • 1 ripe pineapple, cut into rings
  • 4 boneless, skinless chicken thighs or breasts
  • Chopped green onions, for garnish
  • Toasted sesame seeds, for garnish

Instructions

  1. Combine teriyaki sauce, pineapple juice, soy sauce, brown sugar, garlic, ginger, and sesame oil in a bowl. Whisk until well incorporated.
  2. Place chicken in a shallow dish or resealable bag. Pour marinade over chicken, ensuring all pieces are coated. Refrigerate for at least 2 hours, or preferably overnight.
  3. Preheat grill to medium-high heat. Ensure grates are clean and oiled.
  4. Remove chicken from marinade, reserving liquid for basting. Grill chicken for 6-7 minutes per side, basting with reserved marinade. Cook until internal temperature reaches 74°C (165°F).
  5. Grill pineapple rings for 2-3 minutes per side until caramelized with grill marks.
  6. Discard any remaining marinade that touched raw chicken. Arrange grilled chicken on a platter, top with grilled pineapple, and garnish with green onions and sesame seeds.
