Ingredients

  • 2 pieces Pork Tenderloins
  • 8 slices Streaky Bacon
  • 2 tablespoons Olive Oil
  • 1 medium Onion, finely chopped
  • 1 medium Dessert Apple, finely chopped
  • 250 grams Sausagemeat
  • 100 grams Fresh Breadcrumbs
  • 2 teaspoons Fresh Sage, chopped

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. Butterfly the pork tenderloins by slicing them lengthwise, taking care not to cut all the way through.
  3. Sauté finely chopped onions in olive oil in a pan over medium heat until soft and translucent.
  4. Combine the softened onions with sausagemeat, chopped apples, fresh breadcrumbs, and sage until well-integrated.
  5. Stuff the mixture into the butterflied pork tenderloins and wrap tightly with streaky bacon.
  6. Roast in the oven for 30-35 minutes until bacon is golden and internal temperature reaches 70°C (160°F).
  7. Rest your stuffed tenderloin for a few minutes before slicing.
