- 2 pieces Pork Tenderloins
- 8 slices Streaky Bacon
- 2 tablespoons Olive Oil
- 1 medium Onion, finely chopped
- 1 medium Dessert Apple, finely chopped
- 250 grams Sausagemeat
- 100 grams Fresh Breadcrumbs
- 2 teaspoons Fresh Sage, chopped
Instructions
- Preheat your oven to 180°C (350°F).
- Butterfly the pork tenderloins by slicing them lengthwise, taking care not to cut all the way through.
- Sauté finely chopped onions in olive oil in a pan over medium heat until soft and translucent.
- Combine the softened onions with sausagemeat, chopped apples, fresh breadcrumbs, and sage until well-integrated.
- Stuff the mixture into the butterflied pork tenderloins and wrap tightly with streaky bacon.
- Roast in the oven for 30-35 minutes until bacon is golden and internal temperature reaches 70°C (160°F).
- Rest your stuffed tenderloin for a few minutes before slicing.
