- 2 pounds beef chuck, cut into 1-inch cubes
- 2 tablespoons olive oil
- 1 large onion, chopped
- 3 carrots, sliced
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 2 cups beef broth
- 1 can (14.9 oz) Guinness stout beer
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 1 tablespoon fresh thyme, chopped (or 1 teaspoon dried thyme)
- 2 bay leaves
- Salt and pepper to taste
- 4 large potatoes, peeled and cubed
- Fresh parsley for garnish (optional)
Instructions
- In a large pot or Dutch oven, heat olive oil over medium-high heat. Add the beef cubes in batches, ensuring they are browned on all sides. Remove and set aside.
- In the same pot, add the onion, carrots, and celery. Sauté until the vegetables are softened, about 5-7 minutes.
- Add the minced garlic and sauté for an additional minute until fragrant.
- Pour in the Guinness stout, scraping the bottom of the pot to remove browned bits.
- Return the browned beef to the pot. Add beef broth, tomato paste, Worcestershire sauce, thyme, bay leaves, salt, and pepper.
- Bring the mixture to a boil, then reduce heat to low and cover. Let simmer for about 1 hour.
- After the hour, add the cubed potatoes to the pot and stir well. Cover and continue to simmer for an additional hour, or until the beef is tender and the stew thickens.
- Taste and adjust the seasoning with more salt and pepper if necessary.
- Remove the bay leaves before serving, and garnish with fresh parsley if desired.
