Description

A vibrant summer salad featuring grilled nectarines, creamy burrata cheese, and savory prosciutto, all tossed in a zesty lemon herb vinaigrette.


Ingredients

  • 4 medium Nectarines
  • 8 oz Burrata Cheese
  • 4 oz Prosciutto
  • 1 cup Cherry Tomatoes
  • 1 cup Heirloom Tomatoes
  • 1 cup Fresh Cherries
  • 4 cups Mixed Baby Spring Greens
  • 1 pinch Finishing Salt
  • 1 pinch Black Pepper
  • 2 T Fresh Lemon Juice
  • 2 T White Wine Vinegar
  • 1 tsp Lemon Zest
  • 1 tsp Fresh Oregano
  • 1 tsp Fresh Mint
  • 1 tsp Lemon Thyme
  • 4 T Extra Virgin Olive Oil
  • 1 pinch Salt
  • 1 pinch Pepper

Instructions

  1. Preheat your grill to medium-high heat.
  2. Grill the nectarines and cherries until lightly caramelized, about 2-3 minutes per side.
  3. Combine the grilled nectarines, cherries, burrata, cherry tomatoes, heirloom tomatoes, and mixed spring greens in a large bowl.
  4. Toss gently.
  5. Whisk together all vinaigrette ingredients until emulsified.
  6. Drizzle the vinaigrette over your salad mixture and gently toss to combine.
  7. Serve the salad topped with prosciutto if using, and add finishing salt and black pepper to taste.

Notes

  • For a vegetarian version, simply omit the prosciutto.
