Grilled Lemon Shrimp with Pesto Couscous is a quick and flavorful dish that combines succulent shrimp with aromatic pesto couscous.


Ingredients

  • 2 pounds raw, deveined shrimp
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lemon zest
  • 2 cloves garlic, minced
  • ½ teaspoon crushed red pepper flakes
  • Cherry tomatoes (optional for skewering)
  • Fresh basil (for serving)
  • Lemon wedges (for serving)
  • 2 cups cooked couscous
  • 4 cups fresh basil
  • ½ cup finely grated parmesan cheese
  • ⅓ cup toasted pine nuts
  • 3 cloves garlic
  • ½ to ¾ cup olive oil
  • ½ teaspoon kosher salt
  • ½ teaspoon freshly ground pepper
  • ¼ teaspoon crushed red pepper

Instructions

  1. Preheat the grill to the highest setting. Place the shrimp in a bowl. Mix olive oil, lemon zest, garlic, and red pepper flakes. Pour over shrimp, toss to coat, and sprinkle with salt and pepper. Let sit for 10 to 15 minutes.
  2. Skewer the shrimp for easy handling on the grill. Add cherry tomatoes for color and flavor.
  3. Grill the shrimp skewers over the heat for 2 to 3 minutes. Flip and grill for another 1 to 2 minutes until opaque and pink. Transfer to a baking sheet to cool.
  4. Serve grilled shrimp over pesto couscous. Drizzle with extra pesto and spritz with lemon.
  5. Cook the couscous according to package instructions, about 15 minutes.
  6. Toast pine nuts in a skillet over low heat for about 5 minutes until golden.
  7. Prepare pesto by blending basil, cheese, pine nuts, and garlic until crumbly. Gradually add olive oil to desired consistency. Season with salt, pepper, and crushed red pepper.
  8. Mix ¼ cup of the pesto into the couscous. Drizzle additional pesto over the top if desired.
  9. Plate couscous in a large dish, topped with shrimp skewers. Garnish with fresh basil leaves.
