  • Juice of 2 fresh limes
  • 23 cloves garlic, minced
  • 2 tablespoons olive oil

  • 2 ripe avocados, diced
  • 2 small Roma tomatoes, diced
  • 1/4 cup fresh cilantro or basil, chopped
  • 1 tablespoon lime juice
  • Optional garnishes: lime wedges, extra virgin olive oil, queso fresco or feta cheese, toasted pumpkin seeds

Instructions

  1. Trim excess fat from chicken breasts. Pound to about 3/4-inch thickness if needed.
  2. Prepare the marinade: Whisk lime juice, minced garlic, olive oil, salt, and pepper. Add cumin or chili powder if desired.
  3. Marinate the chicken: Place chicken in a bag or dish, pour marinade over, and refrigerate for at least 30 minutes or up to 2 hours.
  4. Prepare the avocado topping: Gently combine diced avocado, tomato, cilantro or basil, lime juice, salt, and pepper. Cover and refrigerate.
  5. Preheat grill to medium-high heat and lightly oil grates.
  6. Grill chicken for 5-7 minutes per side, or until internal temperature reaches 165°F (74°C).
  7. Rest chicken loosely covered with foil for 5 minutes.
