Ingredients

  • 2 cups ripe cherry tomatoes
  • 1 cup Kalamata olives
  • 2 cloves fresh garlic
  • 1 large head cauliflower
  • 1 block feta cheese
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon sea salt
  • 1/2 teaspoon ground pepper
  • 1 cup freshly grated mozzarella
  • 1/4 cup freshly chopped parsley leaves

Instructions

  1. Preheat your oven to 400°F.
  2. Combine the cherry tomatoes, Kalamata olives, pressed garlic, 1 tablespoon of olive oil, sea salt, and pepper in a 9×13″ baking dish.
  3. Nestle the feta block in the center of your baking dish and drizzle with the remaining olive oil.
  4. Bake for 15 minutes, or until the feta begins to brown and the tomatoes are bursting.
  5. Steam the cauliflower florets for 5-6 minutes until tender-crisp.
  6. Mash the feta and tomatoes together with a fork to create a creamy sauce.
  7. Fold in the steamed cauliflower florets, minced garlic, and a pinch of sea salt and pepper.
  8. Top with freshly grated mozzarella and return to the oven.
  9. Bake for an additional 15-20 minutes until bubbly and golden on top.
  10. Garnish with fresh parsley and enjoy!
