- 2 cups ripe cherry tomatoes
- 1 cup Kalamata olives
- 2 cloves fresh garlic
- 1 large head cauliflower
- 1 block feta cheese
- 2 tablespoons extra virgin olive oil
- 1 teaspoon sea salt
- 1/2 teaspoon ground pepper
- 1 cup freshly grated mozzarella
- 1/4 cup freshly chopped parsley leaves
Instructions
- Preheat your oven to 400°F.
- Combine the cherry tomatoes, Kalamata olives, pressed garlic, 1 tablespoon of olive oil, sea salt, and pepper in a 9×13″ baking dish.
- Nestle the feta block in the center of your baking dish and drizzle with the remaining olive oil.
- Bake for 15 minutes, or until the feta begins to brown and the tomatoes are bursting.
- Steam the cauliflower florets for 5-6 minutes until tender-crisp.
- Mash the feta and tomatoes together with a fork to create a creamy sauce.
- Fold in the steamed cauliflower florets, minced garlic, and a pinch of sea salt and pepper.
- Top with freshly grated mozzarella and return to the oven.
- Bake for an additional 15-20 minutes until bubbly and golden on top.
- Garnish with fresh parsley and enjoy!
