Grandma’s Chicken Noodle Soup That Warms the Soul

- 2 tablespoons Olive oil
- 2 tablespoons Butter
- 1 large Yellow onion (diced)
- 2 large Carrots (diced)
- 2 stalks Celery (diced)
- 3 cloves Garlic (minced)
- 1 teaspoon Dried thyme
- 1 teaspoon Dried rosemary
- 1 teaspoon Dried sage
- 1 pound Boneless, skinless chicken breasts (cubed)
- 8 cups Chicken broth (homemade or store-bought)
- 2 pieces Bay leaves
- 8 ounces Dry egg noodles
- to taste Salt
- to taste Pepper
Instructions
- In a large pot or Dutch oven, warm the olive oil and butter over medium heat. Add the diced onion, carrots, and celery, cooking until they’re soft and fragrant, about 5-7 minutes.
- Stir in the minced garlic, dried thyme, rosemary, and sage. Allow them to mingle for about 30 seconds, until the kitchen is filled with their inviting aroma.
- Add the cubed chicken breasts, chicken broth, and bay leaves. Bring the mixture to a rolling boil, then reduce the heat to medium-low. Simmer for 30-40 minutes or until the chicken is tender and fully cooked.
- Stir in the egg noodles and cook until al dente, typically about 8-10 minutes. Be sure to stir occasionally to prevent sticking. Taste, and season with salt and pepper as desired.
- Discard the bay leaves and ladle the soup into bowls. Garnish with fresh parsley for an extra pop of color and flavor. Enjoy sharing this heartwarming soup with loved ones!
