Ingredients

- 4 large Floury potatoes (e.g., Russet)
- 2 tablespoons White vinegar
- 1 tablespoon Kosher salt
- Oil as needed Canola or vegetable oil
- To taste Salt for seasoning
Instructions
- Peel and cut the floury potatoes into thin 6mm (¼-inch) fries.
- Soak the fries in cold water with white vinegar and kosher salt. Bring to boil, then simmer for 10 minutes.
- Drain the fries and let them sit on a towel-lined tray to steam dry completely.
- Heat oil in a deep pot to 400°F (205°C). Fry the potatoes in small batches for 50-60 seconds.
- Drain the fries and set aside for at least 30 minutes to cool completely.
- Reheat the oil to 400°F (205°C) and fry the cooled fries in small batches for about 4 minutes.
- Drain the fries and immediately toss with salt in a large bowl. Serve hot.
