Ingredients

  • 4 large Floury potatoes (e.g., Russet)
  • 2 tablespoons White vinegar
  • 1 tablespoon Kosher salt
  • Oil as needed Canola or vegetable oil
  • To taste Salt for seasoning

Instructions

  1. Peel and cut the floury potatoes into thin 6mm (¼-inch) fries.
  2. Soak the fries in cold water with white vinegar and kosher salt. Bring to boil, then simmer for 10 minutes.
  3. Drain the fries and let them sit on a towel-lined tray to steam dry completely.
  4. Heat oil in a deep pot to 400°F (205°C). Fry the potatoes in small batches for 50-60 seconds.
  5. Drain the fries and set aside for at least 30 minutes to cool completely.
  6. Reheat the oil to 400°F (205°C) and fry the cooled fries in small batches for about 4 minutes.
  7. Drain the fries and immediately toss with salt in a large bowl. Serve hot.
