- 3 cups gluten-free all-purpose flour
- ½ cup granulated sugar
- 2 teaspoons instant yeast
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 cup buttermilk, warmed
- ½ cup unsalted butter, melted
- 2 large eggs
- Zest of 1 large orange
- 1 tablespoon orange juice (fresh)
- 1 teaspoon vanilla extract
- 1 cup powdered sugar
- 2 tablespoons orange juice (fresh)
- 1 teaspoon orange zest
- Pinch of salt
Instructions
- In a large mixing bowl, combine gluten-free flour, sugar, instant yeast, baking powder, baking soda, and salt.
- In a separate bowl, whisk together the warm buttermilk, melted butter, eggs, orange zest, orange juice, and vanilla extract until well combined.
- Gradually add the wet ingredients to the dry ingredients. Mix until a soft dough forms and everything is well incorporated.
- Cover the bowl with a clean towel and let the dough rise in a warm place for about 1 hour, or until it has doubled in size.
- Once the dough has risen, turn it out onto a floured surface. Roll it out into a rectangle approximately 1/2 inch thick.
- Brush the surface with melted butter and sprinkle with cinnamon and extra sugar if desired.
- Starting from one long edge, tightly roll the dough into a log. Slice the log into 12 equal pieces.
- Arrange the rolls in a greased baking dish. Cover and let them rise again for about 30 minutes.
- During the second rise, preheat your oven to 375°F (190°C).
- Bake the rolls in the preheated oven for 25 minutes or until they are golden brown.
- While the rolls are baking, mix powdered sugar, orange juice, orange zest, and a pinch of salt in a small bowl to make the glaze.
- Once the rolls are out of the oven, let them cool for about 15 minutes. Drizzle the orange glaze over the rolls before serving.
