Ingredients

  • 3 cups gluten-free all-purpose flour
  • ½ cup granulated sugar
  • 2 teaspoons instant yeast
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup buttermilk, warmed
  • ½ cup unsalted butter, melted
  • 2 large eggs
  • Zest of 1 large orange
  • 1 tablespoon orange juice (fresh)
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar
  • 2 tablespoons orange juice (fresh)
  • 1 teaspoon orange zest
  • Pinch of salt

Instructions

  1. In a large mixing bowl, combine gluten-free flour, sugar, instant yeast, baking powder, baking soda, and salt.
  2. In a separate bowl, whisk together the warm buttermilk, melted butter, eggs, orange zest, orange juice, and vanilla extract until well combined.
  3. Gradually add the wet ingredients to the dry ingredients. Mix until a soft dough forms and everything is well incorporated.
  4. Cover the bowl with a clean towel and let the dough rise in a warm place for about 1 hour, or until it has doubled in size.
  5. Once the dough has risen, turn it out onto a floured surface. Roll it out into a rectangle approximately 1/2 inch thick.
  6. Brush the surface with melted butter and sprinkle with cinnamon and extra sugar if desired.
  7. Starting from one long edge, tightly roll the dough into a log. Slice the log into 12 equal pieces.
  8. Arrange the rolls in a greased baking dish. Cover and let them rise again for about 30 minutes.
  9. During the second rise, preheat your oven to 375°F (190°C).
  10. Bake the rolls in the preheated oven for 25 minutes or until they are golden brown.
  11. While the rolls are baking, mix powdered sugar, orange juice, orange zest, and a pinch of salt in a small bowl to make the glaze.
  12. Once the rolls are out of the oven, let them cool for about 15 minutes. Drizzle the orange glaze over the rolls before serving.
