Ingredients

Scale
  • 2 cups Almond Flour (Substitution: Try sunflower seed flour for a nut-free option.)
  • 1 cup Oat Flour (Substitution: Can replace with ground rolled oats if oat flour isn’t available.)
  • 3 large Eggs (Note: For a vegan option, flax eggs may work.)
  • 1 cup Maple Syrup (Substitution: Honey may be used, but it will alter the maple essence.)
  • 1/2 cup Coconut Sugar (Note: Brown sugar can substitute, but will add more moisture.)
  • 1/2 cup Butter (Substitution: Use coconut oil for a dairy-free option.)
  • 1 cup Greek Yogurt (Substitution: Dairy-free yogurt can be used for a vegan version.)
  • 2 teaspoons Vanilla Extract (No substitutions necessary, but pure extract is preferable.)
  • 1 teaspoon Cinnamon (Optional but recommended for extra flavor.)
  • 8 ounces Cream Cheese (Substitution: Dairy-free cream cheese for a non-dairy option.)
  • 1/4 cup Coconut Sugar (Adjust quantity to taste for sweetness.)
  • 1 teaspoon Vanilla Extract (A touch of pure extract makes a big difference.)

Instructions

  1. Preheat the oven to 350°F (175°C) and line an 8×8 inch square baking dish with parchment paper.
  2. Whisk together in a large bowl the melted butter, eggs, maple syrup, coconut sugar, Greek yogurt, and vanilla extract until smooth.
  3. Add dry ingredients like almond flour and oat flour to the wet mixture, stirring until a smooth batter forms.
  4. Pour the batter into the prepared baking dish, spreading it evenly with a spatula.
  5. Bake for about 25 minutes or until a toothpick inserted into the center comes out clean.
  6. Cool the cake in the pan for 5 minutes, then transfer it to a cooling rack to cool completely.
  7. Prepare the frosting by whisking together the cream cheese, coconut sugar, and vanilla extract until smooth.
  8. Frost the cooled cake with the cream cheese mixture and sprinkle with cinnamon if desired. Cut into 12 squares for serving.
