Ingredients

  • 23 pounds Pork loin
  • 4 stems Fresh rosemary
  • 2 tablespoons Olive oil
  • 4 cloves Garlic
  • 1/4 cup Honey
  • 1/4 cup Soy sauce
  • 2 tablespoons Apple cider vinegar
  • to taste Salt
  • to taste Pepper
  • Mashed potatoes
  • Fresh salad

Instructions

  1. In a bowl, combine olive oil, minced garlic, chopped fresh rosemary, salt, and pepper. Mix well to create a fragrant marinade.
  2. Rub the marinade all over the pork loin, ensuring it’s coated evenly. Allow it to marinate for at least 30 minutes.
  3. Set your oven to 375°F (190°C) and let it preheat while you prepare the glaze.
  4. In a small saucepan, mix honey, soy sauce, and apple cider vinegar. Heat over medium until it begins to simmer.
  5. Place the marinated pork in a roasting pan and brush it generously with the prepared glaze. Roast for about 25-30 minutes per pound.
  6. Every 15 minutes, baste the pork with additional glaze.
  7. Once done, remove the pork from the oven and let it rest for 10-15 minutes before slicing.
