Ingredients

  • 3 tablespoons sesame oil or olive oil
  • 1.5 pounds ground chicken or ground pork
  • to taste black pepper
  • to taste chili flakes
  • 3 tablespoons salted butter
  • 1 tablespoon Thai red curry paste
  • 34 cloves garlic, freshly chopped
  • 1 tablespoon fresh ginger
  • 2 bell peppers, sliced
  • 1.5 cups fresh pineapple chunks
  • 1 cup cashews or peanuts
  • 0.5 cup tamari or soy sauce
  • 12 tablespoons honey or real maple syrup
  • 1/2 cup fresh cilantro
  • 1/4 cup fresh Thai basil or basil
  • green onions
  • sweet Thai chili sauce (optional)
  • sesame seeds (optional)

Instructions

  1. In a large skillet, add 3 tablespoons of sesame or olive oil over medium heat.
  2. Add 1 1/2 pounds of ground chicken or pork to the skillet. Break up the meat with a spatula, cooking until it’s browned and cooked through, about 5 minutes.
  3. Stir in 3 tablespoons of salted butter, 3-4 cloves of chopped garlic, and 1 tablespoon of fresh ginger. Cook for 2 minutes.
  4. Toss in 2 sliced bell peppers and 1 1/2 cups of pineapple chunks along with 1 cup of cashews. Cook for an additional 2-5 minutes.
  5. Drizzle over 1/2 cup of tamari (or soy sauce) and 1-2 tablespoons of honey. Stir until the sauce fully coats the chicken.
  6. In a separate bowl, combine the remaining 3/4 cup of pineapple with 1/2 cup of chopped cilantro and 1/4 cup of fresh basil. Toss well.
  7. Spoon the chicken mixture over bowls of rice. Top with the pineapple-cilantro-basil mix and green onions.
