- 6 chicken thighs, bone-in and skin-on
- 4 tablespoons fresh ginger, minced
- 4 tablespoons garlic, minced
- 1/4 cup soy sauce (low-sodium recommended)
- 1/4 cup honey or brown sugar
- 2 tablespoons rice vinegar or apple cider vinegar
- 2 tablespoons sesame oil
- 1 teaspoon black pepper
- 1 teaspoon salt
- 2 green onions, thinly sliced (for garnish)
- Toasted sesame seeds (for garnish)
Instructions
- Set your oven to 400°F (200°C).
- In a bowl, combine the minced ginger, minced garlic, soy sauce, honey (or brown sugar), vinegar, sesame oil, black pepper, and salt. Mix well until sugar is dissolved.
- Place the chicken thighs in a large zip-top bag or a bowl. Pour the marinade over the chicken, ensuring all pieces are well-coated. Seal the bag or cover the bowl and marinate in the fridge for at least 20 minutes (up to overnight for deeper flavor).
- After marinating, take the chicken thighs out of the fridge. Place them skin-side up in a baking dish. Pour the leftover marinade over the chicken.
- Insert the baking dish into the preheated oven. Bake for 40-50 minutes, or until the chicken thighs reach an internal temperature of 165°F (75°C) and the skin is golden brown.
- Once done, remove the chicken from the oven and let it rest for 10-15 minutes before serving.
- Top with sliced green onions and toasted sesame seeds for added flavor.
