Ingredients

  • 6 chicken thighs, bone-in and skin-on
  • 4 tablespoons fresh ginger, minced
  • 4 tablespoons garlic, minced
  • 1/4 cup soy sauce (low-sodium recommended)
  • 1/4 cup honey or brown sugar
  • 2 tablespoons rice vinegar or apple cider vinegar
  • 2 tablespoons sesame oil
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 2 green onions, thinly sliced (for garnish)
  • Toasted sesame seeds (for garnish)

Instructions

  1. Set your oven to 400°F (200°C).
  2. In a bowl, combine the minced ginger, minced garlic, soy sauce, honey (or brown sugar), vinegar, sesame oil, black pepper, and salt. Mix well until sugar is dissolved.
  3. Place the chicken thighs in a large zip-top bag or a bowl. Pour the marinade over the chicken, ensuring all pieces are well-coated. Seal the bag or cover the bowl and marinate in the fridge for at least 20 minutes (up to overnight for deeper flavor).
  4. After marinating, take the chicken thighs out of the fridge. Place them skin-side up in a baking dish. Pour the leftover marinade over the chicken.
  5. Insert the baking dish into the preheated oven. Bake for 40-50 minutes, or until the chicken thighs reach an internal temperature of 165°F (75°C) and the skin is golden brown.
  6. Once done, remove the chicken from the oven and let it rest for 10-15 minutes before serving.
  7. Top with sliced green onions and toasted sesame seeds for added flavor.
