- 1 tablespoon olive oil
- 1.5 pounds baby Yukon Gold or red potatoes, halved
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- ⅓ cup grated Parmesan cheese
- ½ teaspoon salt
- ¼ teaspoon black pepper
- Optional garnish: 1 tablespoon chopped fresh parsley
Instructions
- Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper or aluminum foil for easy cleanup.
- In a small bowl, mix together Italian seasoning, smoked paprika, salt, and pepper. Place chicken breasts on a plate, drizzle with olive oil, and rub evenly. Sprinkle seasonings on both sides and press gently to adhere.
- In a large bowl, combine halved potatoes, olive oil, minced garlic, grated Parmesan cheese, salt, and pepper. Toss until evenly coated.
- Place the seasoned chicken in the center of the prepared baking sheet. Arrange the potatoes around the chicken in a single layer, cut-side down.
- Bake for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and potatoes are golden and crispy. Rotate the pan halfway through cooking.
- Remove from the oven and let the chicken rest for 5 minutes before slicing. Sprinkle with chopped parsley before serving.
