  • 1 teaspoon Italian seasoning
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon olive oil
  • 1.5 pounds baby Yukon Gold or red potatoes, halved
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • ⅓ cup grated Parmesan cheese
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Optional garnish: 1 tablespoon chopped fresh parsley

Instructions

  1. Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper or aluminum foil for easy cleanup.
  2. In a small bowl, mix together Italian seasoning, smoked paprika, salt, and pepper. Place chicken breasts on a plate, drizzle with olive oil, and rub evenly. Sprinkle seasonings on both sides and press gently to adhere.
  3. In a large bowl, combine halved potatoes, olive oil, minced garlic, grated Parmesan cheese, salt, and pepper. Toss until evenly coated.
  4. Place the seasoned chicken in the center of the prepared baking sheet. Arrange the potatoes around the chicken in a single layer, cut-side down.
  5. Bake for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and potatoes are golden and crispy. Rotate the pan halfway through cooking.
  6. Remove from the oven and let the chicken rest for 5 minutes before slicing. Sprinkle with chopped parsley before serving.
