- 1 pound shrimp, peeled and deveined
- 1 cup jasmine rice
- 2 cups vegetable broth or water
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 1 lime, juiced and zested
- 1 teaspoon paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
- Fresh cilantro, for garnish
- Optional: Lime wedges for serving
Instructions
- Place the jasmine rice in a fine-mesh strainer and rinse under cold water until the water runs clear.
- In a medium saucepan, bring 2 cups of vegetable broth or water to a boil. Add the rinsed rice, cover, and reduce the heat to low. Cook for about 15-20 minutes or until the liquid is absorbed and the rice is tender.
- In a bowl, combine the shrimp with lime juice, lime zest, paprika, salt, and black pepper. Allow it to marinate while the rice cooks, at least 10 minutes.
- In a large skillet, heat the olive oil over medium-high heat.
- Add the minced garlic and sauté for about 30 seconds until fragrant.
- Add the marinated shrimp to the skillet in a single layer. Cook for 2-3 minutes on each side or until they turn pink and opaque.
- Fluff the rice with a fork and add it to the skillet. Stir until well combined and heated through.
- Remove from heat and garnish with fresh cilantro before serving.
- Optional lime wedges on the side allow guests to adjust the lime flavor to their taste.
