Garlic Herb Butter Roasted Chicken for Irresistible Flavor

- 1 whole chicken
- 2 tablespoons olive oil
- 1/2 cup melted unsalted butter
- 1/2 cup softened unsalted butter
- 5 cloves garlic
- 1 tablespoon lemon zest
- 2 tablespoons lemon juice
- 1/4 cup parsley
- 1 tablespoon rosemary
- 1 tablespoon thyme
- 1 teaspoon paprika
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 head garlic
- 1 lemon quartered
- 1 handful herb sprigs
Instructions
- Preheat oven to 425°F.
- Rinse chicken under cold water and pat dry thoroughly.
- Combine olive oil, melted butter, and lemon juice in a bowl, and pour over the chicken.
- Generously season inside and outside of the chicken with salt and pepper.
- Mix softened unsalted butter with rosemary, thyme, garlic, lemon zest, and paprika in another bowl, then rub all over the chicken.
- Stuff the chicken cavity with halved garlic, lemon quarters, and herb sprigs; tie legs together with kitchen string.
- Place chicken in a greased roasting pan and roast for 1 hour 15-25 minutes, basting halfway through.
- Switch to broil for the last 2-3 minutes for a crispy finish.
- Let the chicken rest for 15 minutes before serving.
