Ingredients
- 1 cup orzo pasta
- 2 tablespoons butter
- 1 tablespoon olive oil
- 3 garlic cloves, minced
- 8 ounces mushrooms, sliced (cremini or button)
- 2 cups fresh spinach
- 2 cups vegetable or chicken broth
- Salt and black pepper to taste
- 1/4 cup grated Parmesan cheese (optional)
- 1 tablespoon chopped fresh parsley (optional)
Instructions
- In a large skillet, heat olive oil and 1 tablespoon of butter over medium heat. Add the sliced mushrooms and cook for 6 to 8 minutes until they are browned and their moisture has evaporated.
- Add the minced garlic and cook for 1 to 2 minutes until fragrant. Stir in the orzo and toast it for 1 to 2 minutes in the butter and mushroom mixture.
- Pour in the broth and bring it to a gentle simmer. Stir occasionally and cook for about 10 minutes, or until the orzo is tender and the liquid is mostly absorbed.
- Stir in the spinach and the remaining tablespoon of butter. Cook for another 2 to 3 minutes until the spinach is wilted.
- Remove from heat and stir in the Parmesan cheese if using. Season with salt and black pepper to taste. Garnish with parsley if desired and serve hot.
