Ingredients
Scale
- 8 oz Pad Thai/wide rice noodles
- 3 tbsp Tamari or soy sauce
- 2 tbsp Real maple syrup
- 1 tbsp Fish sauce
- 1 tbsp Rice vinegar
- 1 tsp Black pepper
- 1 tsp Chili flakes
- 2 tbsp Sesame oil (or olive oil)
- 1 lb Ground chicken
- 1 medium Red bell pepper
- 2 tbsp Salted butter
- 1 medium Shallot
- 3 cloves Garlic
- 2 large Eggs
- 1 cup Mung bean sprouts
- 1/4 cup Chopped cilantro or Thai basil
- 2 stalks Green onions
- 1/4 cup Roasted peanuts
Instructions
- Soak the rice noodles by following the packaged directions. After soaking, drain them to ensure they’re ready for stir-frying.
- Mix the sauce in a bowl by combining tamari or soy sauce, maple syrup, fish sauce, rice vinegar, black pepper, and chili flakes.
- Heat a large skillet over medium heat, then add sesame oil, ground chicken, and red bell pepper. Cook for about 5 minutes until the chicken is browned all over.
- Add in the salted butter, shallot, garlic, and a pinch of chili flakes and black pepper. Continue cooking until the garlic turns golden, about 1-2 minutes.
- Toss the soaked noodles and sauce into the skillet, mixing well. Cook until noodles are warmed through, around 1 minute.
- Scramble the eggs in the skillet by pushing the noodles to one side and adding the beaten eggs to the other side. Cook until edges set, then roughly combine everything together.
- Incorporate the mung bean sprouts, cilantro, and green onions, tossing gently to combine all flavors.
- Serve the warm noodles topped with fresh basil, remaining green onions, chopped peanuts, and chili flakes. Add a squeeze of lime juice for an extra zing of flavor.
