  • For the Chicken:
  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 teaspoon paprika
  • ½ teaspoon Italian seasoning (optional)
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • 2 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • For the Parmesan Pasta:
  • 8 oz pasta of your choice (penne, fettuccine, or rigatoni)
  • 1 tablespoon unsalted butter
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • ½ to 1 cup freshly grated Parmesan cheese
  • ¼ cup reserved pasta water (optional)
  • Salt and pepper, to taste
  • Optional Garnish:
  • Fresh chopped parsley
  • Extra Parmesan for topping

Instructions

  1. Boil the pasta in generously salted water until al dente. Reserve ¼ cup of pasta water, then drain the pasta.
  2. Season chicken pieces with paprika, Italian seasoning, salt, and pepper. Heat olive oil and 1 tablespoon of butter in a skillet over medium-high heat. Sear chicken in a single layer until golden brown and cooked through.
  3. Add minced garlic and remaining 1 tablespoon of butter to the chicken. Stir for 1-2 minutes until fragrant. Remove chicken and set aside.
  4. In the same skillet, melt 1 tablespoon of butter over medium heat. Add minced garlic and sauté until fragrant. Pour in heavy cream and bring to a soft simmer.
  5. Gradually add grated Parmesan cheese, stirring continuously until the sauce thickens slightly. Add reserved pasta water if needed to reach desired consistency.
  6. Add the cooked pasta to the skillet and toss to coat evenly in the sauce.
  7. Return the garlic butter chicken bites to the skillet and mix well. Heat through for another minute or two.
  8. Taste and adjust seasoning with salt and pepper. Garnish with fresh parsley and extra Parmesan if desired. Serve warm.
