- 115 grams unsalted butter, melted and cooled (½ cup)
- 100 grams granulated sugar (½ cup)
- 2 tablespoons brown sugar, packed
- 1 large egg yolk, room temperature
- 240 grams ube jam (about 1 cup), room temperature
- 1 tablespoon ube extract
- 150 grams all-purpose flour (1 1/4 cups)
- ½ teaspoon baking powder
- ½ teaspoon salt
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper.
- In a large bowl, whisk together melted butter, granulated sugar, and brown sugar until smooth.
- Add egg yolk, ube jam, and ube extract. Whisk until fully combined.
- Sift flour, baking powder, and salt into the bowl. Gently fold dry ingredients into wet ingredients until no streaks of flour remain.
- Pour batter into the prepared pan and smooth the top.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
- Cool in the pan for 15 minutes before transferring to a wire rack. Allow to cool completely before slicing.
