  • 1 teaspoon Black pepper (Freshly cracked)
  • 2 tablespoons Balsamic vinegar or red wine (For acidity)
  • 8 ounces Mushrooms (Thinly sliced)
  • 1 cup Raw cashews (Soaked for at least 20 minutes)
  • 1 cup Broth (Vegetable broth recommended)
  • 2 tablespoons Lemon juice (Adds brightness)
  • 2 tablespoons Nutritional yeast (Infuses cheesy flavor)
  • 1 teaspoon Italian seasoning (Herb blend)
  • 1 teaspoon Salt (Taste as you go)
  • 1 teaspoon Miso (Adds depth)
  • 1 teaspoon Black pepper (A dash for warmth)
  • 8 sheets Lasagna pasta sheets (Broken into pieces)
  • 4 cups Spinach (Packed tightly)
  • 2 cups Broth or water (For cooking pasta)
  • 1 teaspoon Red pepper flakes (Optional for spice)

Instructions

  1. Heat a skillet over medium heat, then add vegan butter and sliced onions. Cook for about 8 minutes, stirring occasionally, until the onions look translucent and fragrant.
  2. Stir in the minced garlic, dried thyme, salt, and black pepper. Continue cooking until the onions turn a beautiful golden color.
  3. Pour in the balsamic vinegar or red wine and mix well. Keep cooking until the onions begin to caramelize, about 5 more minutes. Reserve ¾ of this mixture for garnish.
  4. Add the thinly sliced mushrooms to the skillet and stir well. Cook for an additional 1-2 minutes until the mushrooms are tender.
  5. In a blender, combine soaked cashews, broth, lemon juice, nutritional yeast, Italian seasoning, salt, miso, and black pepper. Blend until smooth.
  6. Pour the creamy sauce into the skillet with the onion mixture. Gently fold in the broken lasagna sheets and 2 cups of broth.
  7. Cover the skillet and let it cook for 12-15 minutes, stirring occasionally.
  8. Once the pasta sheets are cooked to your liking, fold in the packed spinach gently and cover for 3 minutes to allow it to wilt.
  9. Top with the reserved caramelized onion mixture. Add red pepper flakes if desired.
