Instructions

  1. Prepare the Dough: Place your store-bought pizza dough in a bowl and cover it tightly. Let it relax at room temperature for about 3-4 hours until it becomes pliable.
  2. Caramelize the Onions: Heat olive oil and 1 tablespoon of butter in a skillet over medium heat. Add your sliced onions and cook for 5 minutes, stirring occasionally, until they start to soften.
  3. Slow Cook Onions: Reduce the heat to low and continue to cook the onions for an additional 10 minutes. Stir occasionally, and watch for them to turn golden brown and jammy.
  4. Season the Onions: Sprinkle in the kosher salt, sugar, and freshly ground pepper. Add the remaining tablespoon of butter and cook for another 10 minutes, until the onions are beautifully caramelized. Stir in thyme, balsamic vinegar, and optional anchovy paste, then let cool.
  5. Assemble the Pizza: Preheat your oven to 425°F. Grease a large sheet pan and spread the dough into a thin layer. Sprinkle 2/3 of the grated Gruyère cheese over the dough, add the caramelized onions, and top with the remaining cheese. Season with salt and pepper to taste.
  6. Bake the Pizza: Place the pizza on the bottom rack of the oven and bake for about 15 minutes, or until the crust is golden brown and the cheese is bubbling.
