Ingredients
- 2 tablespoons butter
- 1 large yellow onion, thinly sliced
- 1 teaspoon sugar
- 2 cloves garlic, minced
- 2 cups cooked shredded or cubed chicken
- 1 cup uncooked white rice
- 2 cups beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 cup shredded mozzarella or Swiss cheese
- Fresh parsley for garnish (optional)
Instructions
- In a large skillet or oven-safe pan, melt the butter over medium heat. Add the sliced onions and sugar. Cook slowly, stirring often, until the onions are deep golden brown and caramelized, about 20 to 25 minutes.
- Add the minced garlic and cook for another minute until fragrant.
- Stir in the uncooked white rice, beef broth, Worcestershire sauce, dried thyme, salt, and black pepper. Bring the mixture to a simmer.
- Add the shredded chicken and stir to combine.
- Cover the pan, reduce the heat to low, and cook for 18 to 20 minutes, or until the rice is tender and most of the liquid is absorbed.
- Remove the lid, sprinkle the shredded mozzarella or Swiss cheese evenly over the top, and cover again for 2 to 3 minutes to let the cheese melt.
- Garnish with fresh parsley if desired and serve warm.
