Instructions

  1. Make the caramel: In a saucepan, melt 1 cup of sugar over medium heat until it begins to caramelize and turns golden brown.
  2. Carefully add 1 cup of water to the hot caramel and stir until smooth.
  3. Pour the caramel into a loaf pan, swirling to coat the bottom.
  4. Prepare the flan mixture: In a large bowl, whisk together coconut milk, sweetened condensed milk, eggs, vanilla extract, and shredded coconut until smooth.
  5. Assemble the flan: Pour the flan mixture into the loaf pan over the set caramel.
  6. Cover the pan with aluminum foil.
  7. Bake: Place the loaf pan into a larger pan filled with hot water (about 1-inch high) and bake at 350°F (175°C) for 50-55 minutes, or until the flan is set and a knife inserted comes out clean.
  8. Cool and serve: Let the flan cool to room temperature before refrigerating for at least 3 hours.
  9. To serve, carefully invert the flan onto a plate to reveal the caramel topping.
