- 12 ounces tofu, extra firm
- ½ teaspoon kosher salt
- 2 tablespoons oil and vegan butter
- 2+ tablespoons sage and onion seasoning
- ¼ – ½ teaspoon garlic powder (optional)
- ½ cup vegan chicken broth
- 1 cup oyster mushrooms, shaved
- 3–4 pieces green onions, sliced
Instructions
- Press the tofu block gently between paper towels to remove excess moisture. Slice or shave it using a sharp knife or mandoline.
- Prepare the mushrooms by slicing or shaving them similarly to the tofu.
- Combine the sliced tofu and mushrooms in a large bowl. Drizzle with olive oil and toss to ensure each piece is coated.
- Season with half of the sage and onion seasoning. Toss to incorporate the flavor, then add the remaining seasoning and toss again.
- Heat 1 tablespoon of vegan butter, ½ tablespoon of olive oil, and ½ teaspoon of kosher salt in a skillet over high heat.
- Add the tofu and mushroom mixture to the hot skillet, allowing flavors to mingle.
- Stir and flip the tofu until some pieces are crispy while others remain tender, about 10-15 minutes.
- Pour in ¼ cup of vegan chicken broth halfway through cooking to keep the tofu moist.
- Taste your creation and adjust the seasoning if needed. Garnish with fresh herbs for extra flavor.
