Description

This Fajita Chicken Casserole transforms Tex-Mex flavors into a comforting one-dish meal. It combines shredded chicken, instant rice, and bell peppers in a creamy, flavorful base seasoned with fajita spices. Topped with melted Mexican cheese, it’s a convenient and satisfying family dinner.

  • 4 cups shredded cooked chicken
  • 2 cups instant rice
  • 1 can (295g) cream of chicken soup
  • 240ml sour cream
  • 1 cup frozen diced onion and bell pepper blend
  • 1 can (285g) diced tomatoes with chilies, undrained
  • 375ml chicken broth
  • 1 packet (34g) fajita seasoning
  • 225g shredded Mexican blend cheese

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly coat a 9×13 inch baking dish with cooking spray.
  2. In a large bowl, combine shredded chicken, uncooked instant rice, cream of chicken soup, sour cream, frozen pepper and onion blend, undrained diced tomatoes with chilies, chicken broth, fajita seasoning, and half of the shredded cheese. Mix well.
  3. Pour the mixture into the prepared baking dish and spread evenly.
  4. Bake for 25 minutes, or until the mixture is hot and the rice has absorbed most of the liquid.
  5. Remove the casserole from the oven and sprinkle the remaining shredded cheese evenly over the top.
  6. Return to the oven and bake for another 5-10 minutes, until the cheese is completely melted and bubbly.
  7. Let the casserole rest for 5 minutes before serving.

Notes

  • This casserole is excellent for meal prep and can be assembled up to 24 hours ahead.
  • Leftovers can be stored in the refrigerator for up to 4 days.
  • For a spicier dish, use hot fajita seasoning, add jalapeños, or serve with hot sauce.
  • Substitute cream of mushroom or celery soup for cream of chicken soup if preferred.
